Whole 30: Day 2

Sleep: 11p-5:45a 7hr 45 min

Workout: 20 min abs, 30 min stretching, 60 min on the stair-climber with Michelle.

Mood: good mood, focused ,and  productive: spent 3 hours at the coffee shop blogging and working on a side project.

Annie (family friend, who I consider sister-like) made these one evening and they were so great I had to do a repeat.

Annie’s Sweet Potato Bites

  • 3 sweet potato’s
  • Olive oil
  • Sea salt
  • Pepper

Slice 3 sweet potato’s into thin slices (approx.. ½ cm) place on a baking sheet.

Brush on olive or oil or lightly drizzle the sweet potato slices.

Add Salt and Pepper…heavier on salt then pepper.  It tastes better (from experience)

Bake in oven on 450 for 30 min or until potato slices are mushy (test with a fork)

Note: 3 medium sweet potato’s feeds 4 people.
